LOIRE ALMOND CAKE 
Preheat the oven to 300F.  Line and butter a 10-inch round cake pan.  In a mixing bowl combine the flour and ground almonds.  Make a hole in the middle and add 3 of the egg yolks, sugar, rum, pinch of salt and the butter.  Knead with your fingers until the mixture forms a ball.  Roll out the dough to a thickness of 3/4 inch and line the cake pan.  Brush the surface with the remaining egg yolk.  With a fork make a diamond pattern all over the surface.  Bake for 30 minutes.
 

 

Ingredients: 
1 1/2 cups flour
1 cup ground almonds
2/3 cup sugar
1/2 cup unsalted butter, softened
4 egg yolks
3 tbsp rum
pinch of salt 

Preparation Time 35 mn 
Cooking Time 30 mn 

Tip: 
This cake can be served warm or cold.  It is perfect with tea or coffee.
